The Best Vegan Cheese Sauce

Of course, there are store-bought vegan shredded cheeses and cheese wheels, but there’s nothing like this completely vegan and whole food plant-based cheese sauce! Made with less than 10 ingredients, most of which are seasonings, this is the fastest homemade cheese EVER!

PLUS it’s nut-free! Most store-bought and even homemade vegan cheeses are made with nuts, most of the time cashews, but this recipe has a secret ingredient, TOFU!

My favorite way to use it is for pasta as an Alfredo sauce, or in my baked feta pasta recipe!! We also use it as mozzarella for pizzas, and the Parmesan topping for eggplant Parmesan! 

There are so many ways you can use this simple recipe, you can adjust the seasonings as you like! Plus you can whip it up in less than 5 minutes! 

What kind of tofu can you use? 

It completely depends on your texture preference, or on what type of sauce you’re going for!

  • I recommend extra firm or firm tofu if you’re going for thicker ricotta-like cheese, or you want a little bit more texture in your sauce like some Alfredo pasta has! The thicker it is, the more liquid you might need to add to your sauce to thin it out. I love the creamy yet thick texture of the extra firm/firm tofu in pasta sauce and on pizzas!
  • I have used super firm tofu once but had to add a lot of liquid, but it could be good if you want a thick cheese spread or dip!
  • OR you can use silken tofu, which I recommend if you want a silky, creamy, and runnier sauce! Better to use for a thin cheesy pasta sauce, liquid cheese sauce, or even a dressing! 

Either silken or firm tofu, because it is such an easy and delicious recipe, it doesn’t matter what texture you choose, this recipe is 100% customizable! The garlic and spices you choose will make it so delicious and fresh! Always taste it before adding it to your dish to make sure it has enough salt and pepper, garlic, and lemon juice and tastes good for you!

Ingredients

  • Tofu
  • Water or milk
  • Maple syrup
  • Nutritional yeast
  • Garlic powder
  • Onion powder
  • Basil
  • Oregano
  • Thyme
  • Lemon juice or apple cider vinegar
  • + salt and pepper

With herbs, even dried herbs, you want to try to buy organic as much as possible if you can! Herbs can be high in pesticides and using organic herbs can reduce your exposure to certain toxins found in pesticides.

How to Make the Best Vegan Cheese Sauce

Just add everything into the blender! If you have an immersion blender you can use that here too!

Ingredients

  • 1 block tofu
  • tbsp lemon juice OR apple cider vinegar
  • 1 tbsp maple syrup
  • 3 tbsp nutritional yeast makes it cheesy! can omit if necessary
  • 1 tbsp oregano
  • 2 tsp basil
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • tsp salt
  • 2-4 tbsp soy milk or milk or choice to thin out the sauce as needed

Instructions

  • Add tofu to the blender, then add the other ingredients
  • Blend everything together, adding liquid (milk) as needed to thin
  • Add the blended cheese sauce to cooked pasta noodles, or dollop on top of your pizza, or just eat it with chips!
