Go-To Spaghetti with Tomatoes, Garlic, and Mushrooms

Ingredients

  • 4 cloves garlic minced
  • 1 small onion diced
  • 4 fresh tomatoes chopped
  • 1 container mushrooms any will work, I like shiitake
  • 1 28 oz can crushed tomatoes
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • 1 tbsp balsamic vinegar

Instructions

  • Start boiling the water for the pasta
  • Dice the onion and garlic, heat a sauté pan to medium high heat and add the onion and garlic. add salt and pepper
    Dice the mushrooms, adding them in as you go, then the tomatoes
  • Sauté everything for about 5 minutes, until the mushrooms are cooked through or until the onion in soft.
  • Add the rest of the ingredients- the canned tomatoes, oregano, basil, and balsamic.
    Simmer for about 7-10 more minutes, until flavors meld.
  • Add your cooked pasta, with a tablespoon or two of the pasta water to help bind the noodles and sauce!
  • Taste and adjust seasonings with salt, pepper and more oregano.
