Dice the onion and garlic, heat a sauté pan to medium high heat and add the onion and garlic. add salt and pepperDice the mushrooms, adding them in as you go, then the tomatoes
Sauté everything for about 5 minutes, until the mushrooms are cooked through or until the onion in soft.
Add the rest of the ingredients- the canned tomatoes, oregano, basil, and balsamic.Simmer for about 7-10 more minutes, until flavors meld.
Add your cooked pasta, with a tablespoon or two of the pasta water to help bind the noodles and sauce!
Taste and adjust seasonings with salt, pepper and more oregano.Enjoy!
