Easy Oatmeal Chocolate Chip Cookies

Ingredients

  • ½ cup + 1 tbsp sunflower butter any unsalted, unsweetened nut butter!
  • ½ cup 100% maple syrup
  • ¼ cup date sugar or other sweetener of choice
  • cup apple sauce organic unsweetened
  • 2 tsp vanilla extract
  • 1 heaping cup oat flour
  • 1 ¾ cup rolled oats opt for organic when possible
  • 2 tsp baking soda
  • ½ tsp cinnamon heaping
  • ½ heaping tsp sea salt taste batter and adjust :)
  • 1 cup dairy-free chocolate chips
  • 5 pitted medjool dates ripped into pieces OPTIONAL

Instructions

  • Preheat oven to 350F and get out a lined baking sheet
  • Mix the sunflower butter, maple syrup, date sugar, apple sauce, and vanilla extract together in a large mixing bowl
  • Next, add the oat flour, oats, baking soda, cinnamon, sea salt and mix until everything is smooth and mixed. Then add in the chocolate chips and optional dates
  • Scoop into 1 inch balls on a reusable baking mat or parchment paper, and sprinkle with a little flaky sea salt if your want!
  • Pop in the oven and bake for 11-14 minutes, all depending on the size of your cookies and how soft vs crispy you like them!
  • Enjoy! Dip in your favorite plant milk - my favs are soy and oat milk!

Notes

You might be in for a surprise when these cookies come out, the sunflower butter reacts with the baking soda, causing it to turn GREEN! Now don't be alarmed, it's completely harmless and just does not effect the taste or texture of the cookies, just the color! I know, I know, kind of weird, but its also kinda fun!!!
