Best Healthier Banana Bread | VEGAN, GF, OIL-FREE, REFINED SUGAR-FREE

Ingredients

In a small cup, make the vegan buttermilk

  • cup non-dairy milk I love soy milk but any works!
  • 1 tbsp apple cider vinegar

Wet Ingredients

  • 3-4 ripe bananas
  • 2 heaping tbsp sunflower butter or unsweetened nut butter of choice
  • ½ cup pure maple syrup
  • 2 tbsp ground flax seeds
  • 1 tsp vanilla extract

Dry Ingredients

  • cups organic oat flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ½-¾ cup dairy-free chocolate chips

Instructions

  • Pre-heat the oven to 350℉
  • Start by mixing the milk & vinegar together to make the vegan buttermilk, set aside to thicken
  • In a large mixing bowl, mash the bananas
  • Add all the wet ingredient to the bowl and whisk well
    Then, whisk in the vegan buttermilk
  • Now add all the dry ingredients and stir with a spoon or spatula
  • Taste and adjust salty-ness
  • Fold in chocolate chips
  • Pour into your baking dish, I use a bread pan.
    If you have an extra banana, slice it down the center (end to end) and place on top of the batter, this will caramelize and be such a gooey addition to this banana bread!
  • Bake for 50-60 minutes until top is browned and a toothpick or chopstick comes out relatively clean. (It's okay to have some stickiness on the toothpick but just not wet batter)
