This Oatmeal Chocolate Chip recipe is the gooiest, most indulgent, and addicting oatmeal chocolate chip cookies ever. Full of chocolatey goodness, made with whole oats, oat flour, sunflower butter, & apple sauce! This is one of my all-time favorite simple cookie recipes!

This extremely simple oatmeal chocolate chip cookie recipe can be made in under 30 minutes!

You could eat these cookies for breakfast! They are so full of simple whole-food ingredients! Make these delicious cookies with just one bowl and stuff you already probably have in your pantry!

Though these might seem like your normal oatmeal chocolate chip cookies, that’s not the case!

What makes these cookies so special?

These Vegan Oatmeal Chocolate Chip Cookies are made with SUNFLOWER BUTTER, which when mixed with baking soda, the chlorophyll in the sunflower seeds reacts with the baking soda and turns the sunflower butter GREEN! But don’t worry, it’s completely safe to eat!

The first time I made these cookies with sunflower butter, I was SHOCKED! No one warned me about the inside of my cookies turning green! Plus I didn’t see it until the next day because I made them at night and in dim lighting, so I thought my cookies went bad in one day!! Only to google it and find out that sunflower butter does turn green in some baked goods.

The reason I had never encountered this before is that most of the recipes I make with sunflower butter also have cacao powder, (like my Dark Chocolate Sunflower Butter Muffins!) meaning they are brown and you wouldn’t be able to see any green!!
It blows my mind but doesn’t change my love for these delicious Oatmeal Chocolate Chip Cookies!

What you’ll need to make these:

  • oats & oat flour
  • sunflower butter (or any nut/seed butter)
  • apple sauce
  • pure maple syrup
  • date sugar
  • vanilla extract
  • cinnamon
  • baking soda
  • sea salt
  • + your fav chocolate chips! I use this brand

If you don’t have any oat flour, but you have oats, just pour as many oats as you need oat flour in a dry blender, and blend until the oats are broken down into flour!

To make these cookies:

In a large mixing bowl, stir up all of the wet ingredients, then the dry ingredients! Scoop dough onto a lined baking sheet, I use a tablespoon as a scoop and do a heaping scoop for each cookie. Probably 2 tablespoons of dough per cookie! They don’t spread while cooking too much, but always leave a little room for them to bake properly!

You can see the green from the sunflower butter peeking through a little bit in this photo!

If you are a fan of classic chocolate chip cookies or oatmeal cookies, you will love the flavors of this recipe. Plus the gooey texture of the oats and chocolate chips is magical and melts in your mouth!

Notes

You might be in for a surprise when these cookies come out, the sunflower butter reacts with the baking soda, causing it to turn GREEN! Now don't be alarmed, it's completely harmless and just does not effect the taste or texture of the cookies, just the color! I know, I know, kind of weird, but its also kinda fun!!!
