The BEST Easy Healthy Cornbread | Gluten-free and oil-free!
Delicious, fluffy, easy healthy cornbread is made with real, whole ingredients! Classic flavors with a nostalgic texture! This recipe is vegan, gluten-free, oil-free, refined sugar-free, and nut-free!
This cornbread is also super high in protein! Using silken tofu for the “creamed corn,” adds protein & makes the cornbread perfectly moist!
Cornbread has to have that perfect balance of sweet and savory flavors, and this recipe has such an incredible balance! My whole family loves this recipe anytime we have a vegan bbq night or just need a delicious side!
What you’ll need to make this Easy Healthy Cornbread recipe:
- oat flour, or oats (you can blend them in the blender to make oat flour!)
- corn meal
- sea salt
- baking powder
- corn (fresh, canned, or frozen) preferably organic
- organic silken tofu (firm or extra firm will also work, just blend with milk- more in recipe!)
- apple sauce
- plant milk (I use oat or soy!)
- lemon juice
- maple syrup
How to make this?
This recipe is extremely easy! Minimal ingredients with simple measurements! The only part that is a little annoying is blending up the tofu; however, the ease of the rest of the recipe makes up for it! Just add all the rest of the ingredients together in one bowl, pour into a baking dish, and pop it in the oven!
The first step is to preheat the oven to 400F.
Then we make the silken tofu ‘creamed corn’! Just blend the silken tofu with half of the corn, and all the other wet ingredients.
I use an immersion blender, so it is pretty easy to just add the silken tofu and other ingredients to the little cup it comes with, and blend everything up! But you can use any blender you have! I only bend it for a second just until everything is just mixed, so there is still be bigger pieces of corn left! Then stir in the rest of the whole corn pieces!
Next, in a mixing bowl add the oat flour, corn meal, sea salt, and baking powder and mix with a wooden spoon or spatula.
Add in the silken tofu ‘creamed corn’ and mix until everything is combined!
Bake for about 25 minutes at 400F and enjoy!

Ingredients
Creamed Corn
- 1 cup silken tofu organic. Firm tofu also works, do 1/2 cup tofu, 1/2 cup milk instead of a whole cup, only if using firm or extra firm.
- ½ can corn divided- half blended, half whole
- 2 tbsp apple sauce
- ⅓ cup pure maple syrup
- ¼ cup plant milk soy, oat, almond, etc.
- ½ tbsp lemon juice
Dry Ingredients
- 1 cup oat flour
- 1 cup corn meal organic if possible
- 1 tbsp baking powder
- 1 tsp sea salt
Instructions
Creamed Corn
- In a blender or immersion blender cup, add the tofu, half of the corn, and all other wet ingredients and blend.
- Blend for only a few seconds until everything is combined. Don't over blend, there should still be visible pieces of corn! Then stir in the rest of the corn
Everything else!
- In a mixing bowl add the oat flour, corn meal, sea salt, and baking powder and mix with a wooden spoon or spatula.
- Add the 'creamed corn' to the dry Ingredients and mix until everything is combined! I always taste it to adjust sweetness and saltiness! Maybe adding more maple syrup or a dash more salt!
- Pour batter into a baking dish. I use either a 9x9 or 8x12 size.
- Bake at 400F for about 25 minutes. poke with a chopstick or knife and it should come out clean, a little moist is fine, it will get drier as it cools.
