The last three months at Le Cordon Bleu have been some of the most amazing few months of my life. I’m SO grateful for all the friends I’ve made and chefs I’ve learned from during my time here! What a crazy, beautiful, & magical life-changing experience!
My time in London flew by too quickly! I can’t believe I’m officially a graduate of a plant-based culinary arts program! Here are some photos of graduation & our little celebration dinner! 🌱

Your next hyper obsession 🥞🍓🫐🍴

The easiest and fluffiest vegan pancakes, with homemade blueberry compote! 🫐 I’ve been making these every weekend!

Small batch, makes three large pancakes :)
(Can easily double)

Pancakes 🥞
1 cup oat flour
3 tbsp maple syrup
Flax egg (1/2 tbsp flax & 1.5 tbsp water)
1/2 cup plant milk, I use oat milk
1 tsp vanilla extract
1 heaping tsp baking powder
Pinch of baking soda (about 1/8th tsp)
1/4 tsp salt

Directions:
🥞Mix flax seeds and water and set aside to thicken
🥞Combine oat flour, baking soda, baking powder, & salt
🥞Add plant-based milk, maple syrup, vanilla, & flax egg
🥞Whisk until smooth, adding more milk if needed to thin out the batter, I normally add 2-3 tbsp milk after the batter sits while I cook the first pancake
🥞Cook over medium heat in a nonstick pan, or a heated and oiled stainless steel pan/griddle.

Sweet Blueberry Compote🫐
1/2 cup blueberries, washed
2-3 tbsp maple syrup
1 tbsp water (or more depending on thickness preference)
Pinch of salt
Optional tsp lemon juice

🫐Combine all ingredients in a small saucepan and heat to a low simmer until blueberries are broken down and the mixture has started to thicken/get syrupy, about 8-10 minutes!

This recipe is very forgiving and you can customize it in a lot of ways! You can add chocolate chips or blueberries to the batter as well!

Jerusalem artichoke nuggets with Desiree potato gnocchi, over a creamy Jerusalem artichoke purée. Topped with fried crisps (the artichoke & the skin), toasted sunflower seeds, chives, & sunflower petals

Ajo Blanco (cold soup) - made by blending plant-based milk, almonds, sourdough bread, grapes, cucumber, and garlic. Topped with balled cucumber, sliced red grapes, dill, and drops of garlic oil

Grilled fennel salad - sous vide & grilled fennel wedges, over a charred fennel yogurt, topped with balsamic roasted red onion, crispy fried shallot rings, arugula, and figs

Come with me to my plant-based culinary program at Le Cordon Bleu London!👩🏼‍🍳 One of our first long days at school consisted of learning and preparing two incredible salads!🌱

We did a pickling class a few days before and used a lot of our pickled veg in these recipes! 🫙

The first recipe was a charred gem butter lettuce, topped with pickled carrots, & crispy fried shallots, surrounded by sweet warming pickled plums, and a ‘grape mustard’ vinaigrette to bring everything together!

The next salad was the cutest little endive salad boats, with pickled orange chili fennel inside and topped with brûléed grapefruit, sorrel, dill, & Dijon elderflower vinaigrette!

I’m so glad I had some extra time to try my creations which I desperately needed after a longgg day at school!!
