Ingredients You’ll Need

For the Soup Base:

  • Veggies: Onion, celery, garlic, carrots, potatoes, and shitake mushrooms for hearty texture and flavor.
  • Seasonings: A blend of dried sage, thyme, rosemary, onion powder, salt, and black pepper to build layers of flavor.
  • Liquid: Veggie stock or a mix of stock and water to create a simple but flavorful broth.

For the Herby Drop-Dumplings:

  • Flour: All-purpose flour as the base for the dumplings.
  • Baking Powder: Baking powder to make the dumplings light and fluffy.
  • Herbs: Thyme and sage to complement the soup’s flavors.
  • Liquids: Warm water and olive oil to bind the dough together.

Step-by-Step Instructions

1. Prepare the Soup Base

  1. Sauté the Vegetables: Heat a large pot over medium heat with olive oil or water. Add diced onion and sauté while prepping the other veggies. Gradually add carrots, celery, potatoes, garlic, and mushrooms as you chop, stirring occasionally.
  2. Season the Veggies: Sprinkle in dried sage, thyme, rosemary, onion powder, salt, and black pepper. Stir and let the spices bloom for about a minute.
  3. Add the Liquid: Pour in the veggie stock and bring the soup to a boil. Reduce the heat and simmer for 20 minutes or until the potatoes are fork-tender.

2. Make the Herby Drop-Dumplings

  1. Mix the Dough: In a medium bowl, combine flour, baking powder, thyme, sage, salt, and black pepper. Create a well in the center and pour in warm water and olive oil. Stir until a thick dough forms. Cover with a tea towel and let it rest for at least 10 minutes.
  2. Add to the Soup: Once the soup is almost done, taste and adjust the seasoning if needed. Use a spoon or small scoop to drop 2-tablespoon-sized portions of dumpling dough into the soup. Leave space between each dumpling.
  3. Cook the Dumplings: Cover the pot and let the soup simmer for 10 minutes, allowing the dumplings to cook through and soak up the soup’s flavors.

Serving Suggestions

Ladle the soup into bowls, ensuring each serving gets plenty of dumplings. Garnish with a sprinkle of fresh herbs or a crack of black pepper for a finishing touch. Pair with crusty sourdough bread or a green salad to complete this meal.

Tips for Success

  • Customize the Veggies: Feel free to swap in your favorite vegetables or use up what you have on hand. I’ve made this with no potatoes and no mushrooms and it turned out incredible! Zucchini, kale, or parsnips would be great additions. You can also add in some pasta like bowtie to bulk it up a bit! Bonus if it’s a high protein pasta!
  • Don’t Skip the Rest Time: Letting the dumpling dough rest ensures it absorbs the water properly, resulting in tender, fluffy dumplings.
  • Check the Soup’s Flavor: Always taste the soup before adding the dumplings and adjust the seasoning to your liking.
