My sweet angel Boomer 🤍 My earth angel is now a real angel, 16 beautiful years of so many adventures! Boomer loved life more than anyone, he was the constant peace and calm in my life. Through every hard moment, he has been there. Holding him would instantly make anyone feel solace and love. He was the sweetest, gentlest, kindest soul I have ever known.

My best friend since 9 years old- I’m now 25 and SO blessed to have had such a wonderful life with him. He traveled with me on countless road trips, family events, and island vacations. Always just happy to be there. People always asked how he was so calm on the plane and airport, that was just his vibe- soooo peaceful.

He was such a star. Everyone knows Boomer and to know Boomer is to love Boomer!!
God bless him for all the joy and love he brought to my and so many others lives.

These meaty & umami-packed Lion’s Mane mushrooms are a NEXT-LEVEL plant based dish, paired with mashed Japanese sweet potato and a fresh side salad!

If you think you don’t like mushrooms, trust me—these aren’t your average mushrooms. I used to feel the same way, but Lion’s Mane (or even oyster and shiitake) changed my mind!!

How to Make It:
🍄‍🟫 Sear the mushrooms under a weighted pot for a deep, steak-like crust.
🌱 Coat with a smoky herby spice blend.
🥄 Brush with a miso-maple glaze and bake for extra depth of flavor.

🍃 Spice Blend:
½ tsp each: smoked paprika, garlic powder, onion powder, sage, thyme

🥄 Miso-Maple Glaze:
3 tbsp maple syrup | 3 tsp miso paste | 1 tbsp tomato paste | 1-2 tsp oil (optional)

🍠 Mashed Japanese Sweet Potato:
2 sweet potatoes | ¼ cup plant milk | 2 tbsp maple syrup | 1 tbsp vegan butter (or oil) | Pinch of salt

Homemade Thin-Crust Pizza! 🍕 With Stretchy Vegan Mozzarella!

I’m usually a thick crust girl, but today, I was craving a classic St. Louis-style thin crust (hometown nostalgia!). So I whipped up this easy, no-rise, no-yeast crust, and it went perfectly with my homemade stretchy vegan mozzarella!

✨ Thin Crust Recipe: (makes 1 pizza, I doubled it for 2!)
1 1/4 cups all purpose flour
1 tsp salt
1/2 tsp baking powder
2 tsp olive oil
1 tsp maple syrup or agave
1/2 cup warm water

Mix dry ingredients, then add the wet ingredients and mix until a smooth dough forms (I kneaded mine for 1-2 minutes). Roll it super thin, top with sauce, vegan cheese, and your favorite toppings. I sprinkled garlic & onion powder on the crust for extra flavor! Bake at 450°F for 13-16 minutes until golden brown and crispy.

✨ Stretchy Vegan Mozzarella Recipe:
1 block silken tofu
2 tsp garlic powder
1/3 cup plant milk, I used soy
2 tbsp apple cider vinegar
1/3 cup nutritional yeast (for cheesy flavor!)
1 1/2 tsp salt
3 tbsp tapioca starch
