Your next hyper obsession 🥞🍓🫐🍴

The easiest and fluffiest vegan pancakes, with homemade blueberry compote! 🫐 I’ve been making these every weekend!

Small batch, makes three large pancakes :)
(Can easily double)

Pancakes 🥞
1 cup oat flour
3 tbsp maple syrup
Flax egg (1/2 tbsp flax & 1.5 tbsp water)
1/2 cup plant milk, I use oat milk
1 tsp vanilla extract
1 heaping tsp baking powder
Pinch of baking soda (about 1/8th tsp)
1/4 tsp salt

Directions:
🥞Mix flax seeds and water and set aside to thicken
🥞Combine oat flour, baking soda, baking powder, & salt
🥞Add plant-based milk, maple syrup, vanilla, & flax egg
🥞Whisk until smooth, adding more milk if needed to thin out the batter, I normally add 2-3 tbsp milk after the batter sits while I cook the first pancake
🥞Cook over medium heat in a nonstick pan, or a heated and oiled stainless steel pan/griddle.

Sweet Blueberry Compote🫐
1/2 cup blueberries, washed
2-3 tbsp maple syrup
1 tbsp water (or more depending on thickness preference)
Pinch of salt
Optional tsp lemon juice

🫐Combine all ingredients in a small saucepan and heat to a low simmer until blueberries are broken down and the mixture has started to thicken/get syrupy, about 8-10 minutes!

This recipe is very forgiving and you can customize it in a lot of ways! You can add chocolate chips or blueberries to the batter as well!
